Ingredients

  • 1 bunch chives

  • 1 head of cauliflower, cored and sliced

  • 1 chopped leek

  • 1 chopped medium onion

  • 2 finely chopped cloves garlic

  • 2 sprigs fresh thyme

  • 4 cups vegetable stock or lower-sodium chicken broth

  • ½ cup canola or grapeseed oil

  • ½ cup heavy cream or milk

  • 1 tablespoon unsalted butter

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon chive oil

  • kosher salt and cracked black pepper to taste

Directions

  • Prepare a large pot over medium heat. Heat unsalted butter and extra virgin olive oil. Add garlic, onion, green onion, salt, and pepper to taste. Saute until wilted and fragrant. Add cauliflower, vegetable stock, or lower-sodium chicken broth and heavy cream or milk. Simmer for 15 minutes or until the cauliflower is tender.
  • While waiting. Puree the chives and add canola or grapeseed oil. Blend until smooth. Transfer to a small saucepan and cook over medium heat until the oil mixture boils for 3 minutes. Pour in the cauliflower soup mixture and bring it to a boil again.
  • Serve with chives oil, sprinkle with pepper to taste, and garnish with fresh thyme. Enjoy !!
