History Of Lava Cake:

The dish, which is better known as lava cake, is a dessert that was once an idol in the 1990s. It is called Lava Cake because when the cake is split it releases chocolate sauce, like lava on a volcano. However, some people may not know the history of this sweet dessert. Well, here we describe the history.

Two chefs in the 1980s claimed to have invented the cake. Each chef claims a different time – a span of six years, 1981 and 1987.

The first chef who made his lava cake debut was Michel Bras. This legendary French chef in 1981 claimed the first time the dish was in a restaurant in Laguiole, France. The dessert, he was thought of for two years and baked on top of ramekins filled with chocolate cake batter. In the center of the cake, there is a frozen ball of ganache wrapped in the chocolate cake. When the cake is cooked, the ganache will melt, eventually creating a cake that is almost done. When removed from the oven, the cake deflates a little.

After six years, 1987 to be exact, the lava cake became even more viral. Lafayette restaurant has a chef named Jean-Georges Vongerichten, a chef from New York who is 30 years old. Vongerichten’s recipe calls for only four ingredients – melting butter and chocolate together, combining the mixture with a sugar beat egg yolk. Then bake it in the oven until the outside is cooked through, leaving the center slightly raw.

Besides Lava Cake, this cake is also known as Chocolate Truffle Cake. These melted chocolate cakes have become so common that in 2013, food writer Mark Bittman declared them “the Big Mac of Desserts”. Ingredients

  • 4 oz bittersweet chocolate

  • 4 oz butter

  • 3 large eggs

  • ½ cup sugar

  • ¼ cup flour

  • 1 teaspoon vanilla extract

  • ½ teaspoon Instant coffee or espresso powder

  • powdered sugar for topping

Directions

  • Preheat oven to 400 ° F. Grease a cupcake or ramekin pan with butter or nonstick paper.
  • Sprinkle a cupcake or ramekin pan with cocoa powder and sugar.
  • Melt the bittersweet chocolate in the microwave for 30 seconds. Melted butter too afterward. Do it gradually, don’t mix the two.
  • Put the eggs and sugar in a large bowl, beat until they are pale and fluffy. Add melted chocolate, flour, vanilla extract, and instant coffee. Stir until blended and all ingredients are combined. Pour over the ramekins and place them on the baking sheet. Bake for 12 minutes or until the edges start to come off the ramekins but still jiggle in the center. Remove from oven and let cool slightly.
  • Serve with a sprinkling of powdered sugar, fresh fruit, or vanilla ice cream on top.

Notes

  • You can leave the coffee if you don’t want it, it is added just as an aroma.
