Ingredients

  • 8 oz. boneless chicken breast or thighs, sliced

  • 6 oz. dried rice vermicelli noodles3 chopped garlic cloves
    4 cups chicken broth

  • 1 cup of water

  • ½ cup thinly sliced shallots

  • ½ cup chopped fresh cilantro

  • ¼ cup chopped scallions

  • 2/3 cup coconut milk

  • 3 tablespoons red curry paste

  • 2 tablespoons fish sauce

  • 2 tablespoons cornstarch

  • 2 tablespoons canola oil

  • 1 teaspoon kosher salt

  • 1 jalapeño or red chilis

  • 6 lime wedges

Directions

  • Add oil, garlic, ginger, and red curry paste, saute until fragrant. Add the chicken pieces and cook until the chicken is cooked. Add chicken stock, water, cornstarch, fish sauce, and coconut milk. Add salt if it doesn’t taste right, tasting it occasionally, or add water if it’s too salty. Let the soup boil. Add the cooked rice noodles. And cook again until the vermicelli is wilted.
  • Transfer the soup noodles to a serving bowl. Serve with jalapeño or red chilis, scallions, shallots, lime juice, and finally sprinkle with fresh cilantro. And Coconut Curry Noodle Soup is ready to be enjoyed.
