Gingerbread Pudding:

  • 120grams softened unsalted butter

  • 2 eggs, lightly whisked

  • 1 ½ cups plain flour

  • ½ cup self-raising flour

  • 1 cup golden syrup

  • 1 cup caster sugar

  • 1 cup milk

  • ¼ cup treacle

  • 2/3 cup dark brown sugar

  • 2 tablespoons ground ginger or glace ginger

  • 2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • ½ teaspoon mixed spice

  • ¼ teaspoon cloves

  • Roughly chopped walnuts and whipped cream, or vanilla ice-cream to serve

  • SALTED CARAMEL SAUCE:
  • 1 ½ cups caster sugar

  • 1 ¼ cups cream

  • 2 tablespoon butter

  • 1 teaspoon of sea salt

Directions

  • Preheat oven to 170˚C and grease a baking sheet (25cm x 31cm) or pudding mold with butter or parchment paper.
  • Heat butter, golden syrup, brown sugar, treacle, ground ginger, or glace ginger and mixed spice together in a saucepan over medium heat and stir until combined. Let it simmer for 3 minutes or until it looks shiny. Remove from heat and simmer for 5 minutes.
  • Prepare a large bowl, beat the eggs and milk, pour into the butter mixture, stir until well blended. Add the two sifted flour, baking soda, cinnamon, cloves, and caster sugar. Stir again until all the ingredients are well blended.
  • Pour the mixed mixture on a baking sheet or pudding mold then cover with foil or nonstick parchment paper. Bake for 35 minutes or until the center bounces back when pressed lightly. Remove from oven and let cool for 15 minutes.
  • While waiting for the pudding to cool, we make the caramel sauce. Heat the caster sugar in a non-stick skillet over low heat. Add water and let it simmer for 10 minutes or until the sugar dissolves or white sugar and crystallizes, then begins to turn light yellow. Turn off the heat and pour the sugar solution into the preheated cream in the microwave. Add butter and sea salt, beat again until smooth and all sauce ingredients are combined.
  • Slice the pudding into 12-16 pieces if you are using a baking sheet. However, if you are using a pudding mold, you can put it on a plate and sprinkle it with salted caramel sauce on top. You can also sprinkle whipped cream, or vanilla ice-cream on top of the pudding and then sprinkle Roughly chopped walnuts around the pudding. Serve immediately and enjoy.
