Oatmeal Cookies:

  • 1 large egg

  • 1 ½ cups oats

  • 1 cup all-purpose flour

  • ½ cup of sugar

  • ½ cup light brown sugar

  • 8 tablespoon unsalted butter at room temperature

  • 3/4 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon cinnamon

  • ½ teaspoon cloves

  • ¼ teaspoon nutmeg

  • ¼ teaspoon ground ginger

  • ¼ teaspoon salt

  • GINGER CREAM FILLING:
  • 8 oz cream cheese at room temperature

  • ¼ cup finely chopped crystallized ginger

  • 1/3 cup confectioners sugar

Directions

  • Preheat oven to 350 degrees. Grease a baking sheet with butter or nonstick paper.
  • Place the oats on a baking sheet and bake the oats for 10 minutes or until the oats are light brown. Transfer the pan to a wire rack and let it cool.
  • Put the sifted flour, light brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt into an electric bowl, stirring until combined.
  • Meanwhile, put the butter and sugar in an electric mixer and beat on medium speed until light and fluffy. Add the beaten egg, flour mixture, and roasted oats and mix again until the mixture is combined.
  • Take the dough and shape it into balls using a spoon or ice cream trowel or a small cake trowel. Make several balls 2 inches apart. Place on a non-stick baking sheet and smooth each ball 1/2 inch thick using your hands or the back of a spoon.
  • Bake for 12 minutes or until the cake is browned around the edges and the edges are hard but the center is soft. Remove from oven and let cookies cool for 5 minutes on a baking sheet, then transfer the cookies to a wire rack until they cool completely. Divide the cookie in half, for the top and the bottom.
  • While waiting for the cake to cool, we make the filling. Put the cream cheese, sugar, and ginger in an electric mixer and beat on medium speed until smooth. Cover the bottom of the cake with ginger cream, then cover with the remaining cake. You can enjoy the cake immediately or transfer it to a jar and store it at room temperature or refrigerator.
