What Is Soup Lasagna?

Lasagna itself is a dish made from thin, layered pasta that is usually baked. But this time it’s different, where lasagna is combined with delicious soup. As the name suggests, this soup has all the flavors you would find in traditional lasagna, but the difference is that this soup is in liquid form which also uses tomato sauce, ground beef and sausage, pasta noodles, and cheese. Although lasagna itself is usually baked or in the oven, here lasagna which usually consists of meat, vegetables, chicken, or seafood will be slightly different or even replaced.

This soup starts by mixing the garlic, onion, and tomato. Where tomatoes are used, there are usually 2 types, namely canned tomatoes, which are usually diced, and tomato paste. The tomato paste adds a very strong tomato flavor, making the soup appear richer than soup made with diced tomatoes alone.

Where will the onions and tomatoes be cooked with previously cooked noodles, ground beef, and sausage and seasoned with beef or chicken broth, tomato sauce, Italian spices, salt, and pepper according to taste? Wow, very evocative right?

Until now, lasagna is not only present in one recipe, but there are many variants of lasagna recipes, ranging from baked, oven, soup, even steamed. Ingredients

  • 8 lasagna noodles

  • 4-6 cups beef broth or chicken stock

  • 15 ounce can tomato sauce

  • 15 ounce can petite diced tomatoes

  • ½ pound lean ground beef

  • ½ pound Italian sausage

  • ½ cup ricotta cheese

  • ½ cup grated parmesan cheese

  • ½ cup grated mozzarella cheese

  • ½ cup chopped onion finely

  • ¼ cup chopped parsley or basil leaves

  • 1 tablespoon olive oil

  • 2 teaspoons minced garlic

  • 1 teaspoon ground oregano

  • ½ teaspoon Italian seasoning

  • kosher salt and black pepper to taste

Directions

  • Prepare a large saucepan over medium heat, heat olive oil, add onion and saute until fragrant. Add ground beef and sausages, cook for 5-6 minutes or until the meat and sausages are browned, while occasionally mashing the meat and sausages with a spatula. Add garlic and cook for 30 seconds. Season the beef and sausage mixture with salt and pepper to taste. Add tomato, beef or chicken stock, ketchup, and Italian seasonings. Cook until boiling.
  • Add the lasagna noodles to the soup mixture and cook for another 10-12 minutes or until the noodles are soft.
  • Place the soup in a bowl and sprinkle with ricotta cheese, parmesan and mozzarella. Sprinkle with chopped parsley or basil and oregano. And the soup is ready to be served.

Notes

  • If the soup you are making is too thick, you can add water or add broth to thin it out.
