Every traditional pasta dish is determined by a certain type of pasta, a certain cooking style, and a certain sauce or seasoning. There are many variants and recipes of the pasta itself. Pasta is often made as a main course and as a complement to some soups. One of the most popular pasta dishes is Lemon Ricotta Pasta.

Lemon Ricotta Pasta is a dish made from spaghetti cooked with chicken and spinach mixed with a mixture of ricotta, extra virgin olive oil, spinach, parmesan, lemon juice, grated skin and seasoned with salt and pepper which makes it even more delicious and appetizing.

Ingredients

  • 1 lb. bucatini or spaghetti

  • 1 boneless and skinless chicken breast, iris tipis

  • 1 cup ricotta

  • ½ cup extra-virgin olive oil

  • ½ cup freshly grated Parmesan

  • Zest and juice from 1 lemon

  • fresh spinach

  • Kosher salt and freshly ground black pepper to taste

  • Freshly sliced basil, lemon sliced, and pinch of crushed red pepper flakes for serving

Directions

  • Season each side of the chicken with salt and pepper to taste and cook for 5 minutes until the chicken turns golden brown and the center is cooked, set the chicken aside.
  • Meanwhile, mix the ricotta, extra-virgin olive oil, spinach, Parmesan, and the cooked chicken. Mix well and add lemon juice, and grated skin. Season with salt, pepper to taste, and little red chili flakes.
  • Cook pasta according to package directions. Reserve 1 cup of pasta water, then drain the pasta. Return the pasta to the pan. Add the ricotta mixture and 1/4 cup of the reserved pasta water to the paste and mix well. Add more pasta water if the sauce is too thick.
  • Serve with basil, more Parmesan, and a little olive oil. Enjoy !!
