Loaded Cowboy Cookies are delicious and soft snacks that you can make yourself at home. This sweet snack and dessert is made from a mixture of flour, baking soda, coffee powder, butter, granulated sugar, eggs, vanilla extract, egg yolks, butterscotch chips, chocolate chips, chopped walnuts, rolled oats, raisins, brown sugar, and coconut. bake for 10 minutes to keep it looking wet in the center when you remove it.

What are the Ingredients Needed?

2 Egg
All-purpose Flour
Butterscotch Chips or Peanut Butter Chips
Semi-sweet Chocolate Chips
Walnuts or Almond
Brown Sugar
Granulated Sugar
Baking Soda
Coconut
Butter
Vanilla Extract
Ground Coffee, optional
Rolled Oats, optional
Raisins, optional

How to Make Cowboy Cookies?

First, make a dry dough by mixing flour, baking soda, and coffee grounds. Mix well and set aside.

Then make the wet dough by mixing butter, sugar, 1 egg, vanilla extract, and 1 egg yolk into a mixer bowl and beat until the mixture is soft. Add the dry dough, namely the flour mixture slowly and beat until well blended. Add anything you want to add, we used a mixture of a butterscotch chip, chocolate chip, chopped walnuts, rolled oats, raisins, brown sugar, and coconut to make it even more savory. Stir again until all the dough is combined.

Take the dough and form a circle, then place it on a baking sheet some distance away. Press it with a spoon to make it even. Make sure not to press too hard so the cookies are not too thin. Bake for 10 minutes or until edges is almost brown.

Ingredients

  • 1 egg

  • 1 egg yolk

  • 2 cup all-purpose flour

  • 1 cup butterscotch chips or peanut butter chips

  • 1 cup semi-sweet chocolate chips

  • 1 cup packed brown sugar
    ½ cup chopped walnuts or almond

  • ½ cup granulated sugar

  • ½ cup coconut

  • ½ cup rolled oats, optional

  • ½ cup raisins, optional

  • 3/4 cup softened butter

  • 1 tablespoon vanilla extract

  • ½ tablespoon ground coffee optional

  • ½ teaspoon baking soda

Directions

  • Preheat oven to 350 degrees. Grease a baking sheet with butter or nonstick paper.
  • In a medium bowl, combine flour, baking soda, and coffee grounds. Stir well. Set aside.
  • In a mixing bowl, combine the butter, granulated sugar, 1 egg, vanilla extract, and 1 egg yolk. Beat using a mixer until the mixture is soft. Add the flour mixture slowly and beat until well blended. Add butterscotch chips, chocolate chips, chopped walnuts, rolled oats, raisins, brown sugar, and coconut. Stir again until all the dough is combined.
  • Take the dough and form a circle, then place it on the pan at a distance. Press it with a spoon to make it flat. Make sure not to press too hard so the cookies are not too thin. Bake for 10 minutes or until edges is barely browned. Let it cool on the baking sheet before you move it in a container or jar. Enjoy !!

Notes

  • Make sure not to bake it too long to make it look wet in the middle when you remove it. But if you like crispy cookies you can bake them for 12 minutes.
