Chicken Ingredients:

  • 4 chicken breasts

  • 2 minced cloves garlic

  • 3/4 cup shredded mozzarella

  • 2 tablespoons olive oil or avocado oil or refined coconut oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • BRUSCHETTA INGREDIENTS:
  • 1 ½ cups halved cherry tomatoes

  • ½ cup chopped basil

  • ¼ cup chopped red onion

  • 3 minced cloves garlic

  • 1 teaspoon balsamic vinegar

  • 1 teaspoon olive oil

  • ½ teaspoon salt

  • ¼ teaspoon pepper

Directions

  • Preheat the oven until it reaches 165˚C. And grease the pan with butter or oil or nonstick paper. Place the chicken breast on top.
  • Put the chicken ingredients such as olive oil, oil, balsamic vinegar, garlic, Italian spices, and salt in a small bowl and stir until all are combined. Apply it to the chicken on a baking sheet until it is all coated. Bake chicken in the oven for 30 minutes at 165 degrees.
  • While waiting for the chicken to cook, we make bruschetta. Add all the ingredients of the cherry tomatoes bruschetta, garlic, red onion, basil, and season with olive oil, balsamic vinegar, salt, and pepper. Stir until combined.
