Ingredients

  • 1 box gingersnap cookies, crushed

  • 1 package (10 ounces) mini white marshmallows

  • 2 cups whipped topping

  • 1 cup canned pumpkin puree

  • 4 tablespoons butter melted

  • 2 tablespoons sugar

  • 1½ teaspoons pumpkin pie spice

  • 1½ teaspoons vanilla extract

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

  • ½ teaspoon ground ginger

  • ½ teaspoon ground nutmeg

  • whipped topping

Directions

  • Preheat oven to 350 °. Line a baking sheet or pan with butter or nonstick paper.
  • Enter the crushed ginger cake, sugar, and melted butter, stir until combined. Place the gingerbread crumbs on a non-stick baking sheet or pan. Bake for 8-10 minutes. Remove the pan or pan from the oven and let it cool completely.
  • Heat a large nonstick skillet over low heat, melting the mini white marshmallows, pumpkin puree, and pumpkin pie spices. Continue stirring the chili dough. Add cinnamon, salt, ginger, and nutmeg and mix again until the mixture is smooth. Remove and chill.
  • Add the whipped topping and vanilla extract and stir until combined.
  • Add the pumpkin marshmallow mixture to the cooled ginger crust and spread it evenly. Refrigerate for at least 2-3 hours, or overnight.
