Graham Cracker Crust:

  • 1 cup of graham crackers crushed into crumbs

  • 4 tablespoon unsalted butter melted

  • 2 tablespoon sugar

  • LEMON CHEESECKA FILLING:
  • 16 oz cream cheese softened to room temperature

  • ½ cup sour cream

  • ¼ cup sugar

  • ¼ cup fresh lemon juice

  • 2 eggs room temperature

  • Zest of 1 large lemon

  • BLUEBERRY PIE FILLING:
  • 1 cup fresh blueberries

  • 1 tablespoon granulated sugar

  • 2 teaspoons water

  • 1 teaspoon fresh lemon juice

  • 1 teaspoon cornstarch

Directions

  • Preheat oven to 325 degrees. Line a muffin pan with butter or liner paper.
  • In a small bowl, add the crushed graham cracker crumbs, melted butter, and sugar. Stir until combined. Spread the crust evenly into the muffin pan, if necessary use the bottom of the glass to squeeze the crumbs firmly. Bake for 5 minutes or until golden brown. Remove from oven and let cool completely at room temperature.
  • While waiting for the cold crust, we make the cheesecake. Put the whipped cream cheese, sour cream, sugar, eggs, lemon juice, and lemon zest into the stand mixer with a paddle attachment. Stir until well blended. Stir in the cheesecake mixture and spread it evenly into the cooled muffin tin. Bake again in the oven for 20 minutes. Remove from oven and let cool completely at room temperature. Then transfer it to the refrigerator for 3 hours or overnight.
  • While waiting for the cake to cool in the refrigerator, we make the filling for the blueberry pie. Place the blueberries, sugar, and lemon juice in a saucepan over medium heat. Cook until the berries begin to soften and release their juices, puree the berries as they cook. Once the mixture starts to bubble, beat the water and cornstarch and add to the pan. Cook for 2 minutes, continuously mashing the berries and stirring until the mixture thickens. Remove from heat, carefully strain and set aside the blueberry sauce to cool. Spread the blueberry jam on top of the cheesecake. And store again in the refrigerator until cold until serving time.
  • Serve with toppings to taste, blueberries, and lemon wedges.
