The highlight of this recipe is the use of cranberry sauce. Cranberry sauce is often combined with various Christmas specialties. For example, to add sweetness to roasted turkey, as a mixture of Christmas drinks, or as a Christmas cake topping, and so on.

Cranberry itself is a fruit from the berry class that comes from vines in the subgenus Oxycoccus of the genus Vaccinium. This fruit is also called Vaccinium macrocarpon. This fruit, which comes from the northern part of the United States, is rich in nutrients and low in calories. It is also known to contain proanthocyanidins, which are antioxidants that can stop the growth of certain bacteria on the walls of the urinary tract. In addition, the red fruit with a grape-like shape is known to contain polyphenol compounds, quercetin, and anthocyanins which can improve endothelial function. The endothelium is the cell that lines the circulatory system, from the heart to the capillaries.

Ingredients

  • 1 ready-to-eat graham cracker crust

  • 12 oz. cream cheese softened

  • 4 oz. fresh goat cheese softened

  • ½ cup whole-berry cranberry sauce

  • ¼ cup brown sugar

  • 2/3 cup chopped pecans

  • 1/3 cup granulated sugar

  • 3/4 cup heavy cream

  • 2 tablespoons butter

  • 2 teaspoon vanilla extract

  • 1 teaspoon powdered gelatin

  • ½ teaspoon grated lemon zest

  • 1/8 teaspoon salt

Directions

  • First, place cold water in a small microwave-safe bowl, sprinkle the gelatin powder over the water. Let stand for 5 minutes. Then heat it in the microwave for 15 to 20 seconds or just until it’s runny.
  • Place the heavy cream in a mixer and blend at high speed until stiff peaks form. Transfer the whipped cream to a medium-sized bowl, add cream cheese, goat cheese, granulated sugar, vanilla extract, melted gelatin, cranberry sauce, lemon zest, and salt, and stir again manually until smooth and all ingredients are well blended. Spread the cheese mixture evenly on the bottom of the crust or graham cracker pie crust.
  • Meanwhile, we make the topping. Melt the butter in a small saucepan over medium heat, add the chopped pecans and brown sugar and cook until the sugar melts while continuing to stir the pecans so they don’t burn. Pour over the cheesecake and keep in the refrigerator for at least 3 hours or overnight.
