Thanksgiving itself is a celebration to express gratitude for the crops commonly practiced by Americans and Canadians. This celebration was first performed by Pastor Juan de Padilla in 1541 in Canyon, Texas. Then followed appeared in 1565 celebrated by refugees in St. Augustine, Florida.

Pumpkin Roll Ingredients:

  • 3 large eggs, at room temperature

  • 1 cup (200g) granulated sugar

  • 3/4 cup (96g) all-purpose flour

  • 2/3 cup canned pure pumpkin

  • ½ teaspoon vanilla extract

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 ¼ teaspoon ground cinnamon

  • ¼ teaspoon ginger

  • ¼ teaspoon nutmeg

  • ¼ teaspoon cloves

  • PUMPKIN ROLL FILLING:
  • 1 (8 oz) pkg. cream cheese, at room temperature

  • 1 cup (120g) powdered sugar

  • 6 tablespoons (85g) unsalted butter or margarine

  • 1 teaspoon vanilla extract

  • 1 teaspoon powdered sugar for decoration

Directions

  • Preheat oven to 375 degrees. Grease a jelly roll pan with butter or spray with nonstick baking spray. Line it up with a sheet of parchment paper or wax paper. Also, spray the parchment paper with nonstick cooking spray. And prepare several bowls.
  • In the first bowl. Put the sifted flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt in a small bowl.
  • In the second bowl, put the eggs and sugar and beat using a mixer or manual whisk. Shake for 1-2 minutes. Add pumpkin canned puree, vanilla extract, and flour mixture. Stir until the dough is evenly mixed. Pour the mixture into the prepared baking sheet, spread it evenly, then shake the pan until blended.
  • Bake the cake in the oven for 13 – 15 minutes. After the cake is cooked remove and transfer to a clean, heat-resistant table surface. Carefully peel off the parchment paper. Then start to roll. Roll the cake to the opposite side using knitting gloves. Transfer to a wire rack and refrigerate for 2 to 3 hours.
  • While waiting for the cold cake, we make the filling. Prepare an electric mixer, add the cream cheese, powdered sugar, butter, and vanilla extract. Beat until the mixture is soft. Slowly unroll the cake, spread the cream cheese mixture on top of the cake, then roll the cake again to the opposite side. Cover and wrap in plastic wrap and let cool for 1 hour. Before serving, sprinkle again with powdered sugar to make the cake look pretty and cut into 1-inch slices to make it easier to eat.
