Rustic Potato And Leek Soup Ingredients:

  • 6 russet potatoes, peeled and cut into ½” dice

  • 3 thyme sprigs

  • 3 leeks, remove dark green leaves, and cut into 1/4 inch slices.

  • 3 minced garlic cloves

  • 1 bay leaf

  • 6 cups chicken stock

  • 1 cup whole milk

  • 4 tablespoon unsalted butter

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • Olive oil for drizzling

  • Thyme leaves and flat-leaf parsley for garnish

  • CHEESY BAGUETTE TOAST INGREDIENTS:
  • ½ a sourdough baguette, split lengthwise

  • ½ cup grated gruyere cheese

Directions
