  1. preheat oven to 425 F. Grease baking sheet with oil or butter.
  2. In a large bowl, combine the chicken, potatoes, garlic, 2 tablespoons of olive oil, 1 tablespoon of wheat mustard, ½ teaspoon of salt, and ¼ teaspoon of black pepper.
  3. Chopped chicken skin face up and chopped potatoes face down on the pan, leaving space between them.
  4. In a small bowl, combine the onion slices, mushrooms, and bacon with the remaining olive oil, salt, and pepper to taste. Arrange between the chicken and potatoes, flatten the pan until the edges. Bake for 30 minutes, turning the pan once and a half.

Ingredients

  • 2 lbs bone-in, skin-on chicken pieces

  • 1½ lbs potatoes, halved or quartered to 2-inch pieces

  • 8 oz sliced button mushrooms

  • 1 cup heavy cream

  • 4 tablespoons olive oil

  • 2 tablespoons Dijon mustard

  • 1 tablespoon whole-grain mustard

  • 1 teaspoon thyme leaves

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 garlic clove, grated

  • 2 yellow onions, thinly sliced

  • 3 thick-cut bacon slices, cut to 1/2-inch pieces
