1 fresh turkey (10 to 12 pounds)
1 stick unsalted butter
1 lemon zested and juiced
1 large bunch of fresh thyme
1 apple, sliced
1 lemon, quartered
1 onion, quartered
1 head garlic, halved crosswise
3 fresh sage leaves
1 teaspoon chopped fresh thyme leaves
1 teaspoon poultry seasoning
1 teaspoon kosher salt
½ teaspoon ground black pepper
- Preheat oven to 350 degrees F. Covers a baking sheet or large skillet with butter or nonstick paper.
- Meanwhile, remove the giblets from the turkey and wash the inside and outside of the turkey. Remove excess fat and fluff that remains in the turkey and pat the outside dry. Pat dry with paper towels.
- Melt butter in a small saucepan. Add grated lemon zest, lemon juice, and poultry seasoning. Mix well.
- Place turkey on a large baking sheet or skillet. Sprinkle with salt and pepper on the inside of the turkey cavity. Then fill the cavity of the turkey with a bunch of thyme, sage leaves, lemon, apple, and four onions, each of which has been cut into quarters, and halved garlic. Brush the outside of the turkey with the butter mixture then sprinkle with more salt and pepper. Tie the legs with a kitchen rope and tuck the tips of the wings under the turkey so it doesn’t burn.
- Preheat the turkey to 165 degrees F for 2-3 hours or until the juices are clear as you cut between the leg and thigh. When the turkey is done, remove it from the oven. Transfer the turkey to a cutting board and cover it with aluminum foil. Let stand for 30 minutes before serving.
