Ingredients

  • 1 lb. mixed mushrooms, sliced thinly or quartered

  • 1 thinly sliced red chile

  • 4 slices of bread, toasted

  • 1 cup microgreens

  • ½ cup vegan ricotta cheese

  • ¼ cup chopped walnuts

  • ¼ cup chopped leaf parsley

  • 1 teaspoon fresh chopped thyme

  • ½ teaspoon fresh chopped rosemary

  • 2 tablespoon softened vegan butter

  • ¼ teaspoon pepper

  • ¾ teaspoon Kosher salt

Directions

  • Heat softened vegan butter in a large skillet over medium-high heat. Add the sliced mushrooms. Sauté and stir occasionally for 5 minutes until the mushrooms are tender, fragrant, and golden brown. Add the walnuts, red chilies, and chopped leaf parsley and season with salt and pepper to taste.
  • In a small bowl, combine the vegan ricotta and vegan goat cheese. Spread evenly between the toasted bread, then sprinkle with the mixture of mushrooms that have been cooked earlier. Garnish and sprinkle with microgreens, chopped leaf parsley, chopped thyme, and chopped rosemary on top. And Wild Mushroom Toasts are here to enjoy.
